Each knife is crafted with a razor-sharp stainless steel blade featuring a hollow ground edge that resists dulling and sharpens easily. Depending on the size, the spine thickness ranges from 1/16" to 1/8", giving you the right balance of strength and maneuverability. The curved designs of the cimiters and breaking knives offer excellent leverage for single-pass slicing, while the long slicers glide through brisket, ham, and roasts with ease.
